This book arrived in perfect condition. Because I have one teenager that is a vegetarian and one that is a meat lover I needed inspiration and the ability to cook one meal for everyone instead of two different meals. This book has awesome recipes. I prepared 8 recipes from the book and they all have been pleasing to my vegetarian as well as my meat lover. The recipes are easy and I love the fact that it's a time saver because cooking one meal instead of two quicker. It also explains meat substitutes in great detail.

The only downside is that you wind up dirtying more dishes to keeping the meat and meat stuff separate. This isn't a downside to the book, only to the method.

We have strict vegetarians and opinionated omnivours in our extended family and finding ways to satisfy both can be a challenge, especially on holidays. This cookbook not only solves the problem but does it with style and whimsy. Everyone eating the same dish--their own way! I found the recipes enticing, easy to follow and also delightful to read. All of them are carefully adapted to be served to both/and, and they also have adaptations for all one, or all the other, with healthful eating tips thrown in. The knowledge, humor and verbal skills of both writers light up the pages and inspire the reader.(I admit I may be a bit prejudiced on my son's behalf, but I'm sure you'll agree if you read it) I especially love the biscuits and gravy and the mac and cheese, but the Italian and French dishes will add some needed diversity to my "blended" table. I think Double Take will be appreciated by novice cooks as well as in-home chefs; down-home favorites share the pages with fresh, new creations. I've already given the book to some of my veggie and non-veggie friends and they were thrilled--it seems that almost everyone has friends on both ends of the food spectrum these days. Hopefully this is just the beginning of a recipe trend that seeks to bring harmony to the dining table, rather than separation. Hats off to the authors!

Like some of the other reviewers here, I am an omnivore with plenty of vegetarian family and friends. When there's a big dinner, I often find myself going to meatless chili or a table full of burrito fixings. And that gets boring! Enter Double Take. Rathbun and Holt come to the rescue! So far, I've knocked out the Crostini Toscana (little toasts, half with chicken liver and half with mushrooms--I loved them both!), the Saltimbocca alla Romana (everything is good with Marsala sauce and the "toothpicking" was not really that labor-intensive), and the Biscuits and Sausage Gravy (hard to tell the two versions apart!). The directions are clear and the style is funny. I appreciate the notes on how to make a recipe all veg or all meaty. The sidebars, such as how to make a vegetarian version of glace de viande, are fabulous and informative. All of the recipes are for things you really want to eat tonight--some simple, some more involved. I'll be pulling this one out regularly when "mixed company" is coming! No more pasta primavera for us!

This is a really great book for a vegetarian/meat-atarian house hold like mine. I wish the author included some pictures with the book. But great idea and great recipes.

It's about time! When I am cooking a meal for my vegetarian sweetie, it often results in a ho-hum outcome that leaves the carnivore in me unsatisified. But Double Take gives me a set of easy options to make a meaty version of the same veggie dish that I'm cooking. With the authors' recipes, I can typically do all of my prep and initial cooking in one pot or pan - and then divide it into a second to create a meat-tastic treat. The recipes are simple and straightforward, but creative and tasty - a winning combination for me. A number of reviewers have stated that this book is for beginners - and I believe that this is an asset for those of us who struggle with the basics. As someone who has recently had to abandon some of my specialized cookbooks mid-prep because they do not walk through the essential steps enough to yield good results, I applaud Holt and Rathbun for their ability to guide me through the process. This may be frustrating for the amazingly skilled foodies out there, but I am grateful for these clear, straightforward recipes and the outcome of yummy meals that make everyone happy.

My family is, culinarily, about as dysfunctional as it gets. I am a pescetarian who'll eat pretty much anything. My daughter is a vegetarian who doesn't eat most exotic vegetables. My wife is an omnivore, but a picky one. Family dinners are, to say the least, a hassle, not to mention generally unhealthy (since the only commonality is pasta, really). When I saw this crop up in the list, I jumped at the chance. Could it be the savior of our dinner table? I'm not entirely sure yet, but early results look promising.

I must admit I was expecting the recipes to be a little more complex when it came to splitting things between the vegetarians and the omnivores, but it all turns out to be rather simple; much of the prep work (sauteing vegetables, preparing sauces, etc.) is done all at once, and then half of each preparation is split between the meat dish and the vegetable dish. If you generally shop at your local hypermarket, you may have a few problems coming up with some of the ingredients (seitan, for example, is tough to come by in the big supermarkets in my neck of the woods), but it's worth checking out nonetheless. Turns out this is a very simple idea that no one thought of before, really; you've gotta give these guys credit for codifying it and coming up with some good recipes as evidence that it actually works. They do stretch a few times (vegetarian osso bucco? Can't wait to see how THAT one goes over with your extremist pals), but in general, this is good stuff indeed. *** ½
